Één wand reserveerden we geheel aan tweede hands (professionele) espressomachines; we verkochten veel nieuwe machines en dus namen we altijd de oude espressomachines in. Dit bracht nogal een behoorlijk risico met zich mee wat betreft hygiëne. Veel machines worden in de horeca vaak in of bij de keuken geplaatst, waar het automatisch altijd wat vochtiger is, om nog maar niet te spreken over waar het soms best vies kan zijn. En waar viezigheid en/of vochtigheid is, huizen er altijd wel ‘beessies’.
In alle jaren dat we hele dagen restaurantjes in en uit liepen, hebben we ook veel keukens gezien en deze waren niet altijd de schoonste van het land. Als je bij aanvang van een diner zou weten over welke keuken het betreffende restaurant zou beschikken, zou je er misschien niet graag of zelfs nooit meer willen dineren. Soms liepen zelfs de muisjes vrolijk door de keuken te rennen en dat verbaasde ons best wel. We konden er dus niet aan ontkomen dat ons kantoor bevolkt zou gaan worden door kakkerlakken die in één van de espressomachines bleken te zitten. Ze kropen vrolijk tegen de muur op en Jaco begon direct gewapend met verdelgerspuitbus, aan zijn missie om elke kakkerlak uit te roeien. Gelukkig was de missie geslaagd, maar blijkbaar reageren sommige restaurants niet zo adequaat en heeft ongedierte vrij spel. Dus denk niet dat elke horecagelegenheid altijd mooi, netjes en schoon is: schijn bedriegt!
