Oneindige theecombinaties als vervanging voor het gangbare glaasje likeur, biertje of glas whiskey, is niet iets waar je direct aan zou denken op een party, een avondje uit of een verjaardag.
\nOndanks dat wij zelf natuurlijk Manuel Thee <\/a>uit Itali\u00eb importeren, vond ik het toch leuk om eens aandacht te schenken aan een conculega, die iets extra’s toevoegt aan het product thee. Om precies te zijn verheft hij deze drank tot het hoogste niveau en dat is wat wij ook graag met onze producten doen.<\/p>\n

Tijdens een lunch voor de culinaire pers in Amsterdam presenteerde Dilmah, het ethische theemerk uit Sri Lanka, thee in een geheel ander kader dan we in Nederland gewend zijn.<\/p>\n

Theesommelier Chris Oosterveen liet zien hoe thee uit een wijnglas prima als alcoholvrij alternatief bij de maaltijd kan dienen. Daarnaast trakteerde hij op een aperitief van ijsthee en een \u2018cold brew\u2019. Recentelijk richtte hij \u2018Tea Tender\u2019 op waarmee hij door het hele land op feesten en partijen alcoholvrije theedrankjes serveert.<\/p>\n

Tea Tender
\nMet zijn bedrijf Tea Tender hoopt Oosterveen particulieren en bedrijven een stap verder te brengen in de wereld van thee. Voor hem is thee entertainment en beleving en hij boekt veel succes met zijn alternatieve dranken waar men normaal alcohol zou verwachten. \u201cDoor gebruik te maken van kwaliteitsthee verkrijg je een drank die geschikt is voor meerdere toepassingen en mogelijkheden. Zo zal de alcoholvrije cocktail een helder drankje zijn met een fruitig, rond en dorstlessend karakter\u201d. Voor de combinaties van thee met gerechten speelt de theesommelier met de smaak, het karakter, de tannines en temperatuur van de thee. Dilmah heeft een serie terroir thee\u00ebn die uiterst geschikt zijn voor de combinatie met gerechten.<\/p>\n

Alternatieven
\nAls aperitief serveerde Chris Oosterveen een Iced Tea op basis van groene thee, meloen en cranberrysap. Hiervoor werd de thee warm bereid en daarna gekoeld. De theesommelier liet ook een \u2018cold brew\u2019 van Dilmah\u2019s groene Jasmijnthee proeven. Hierbij werd de thee minimaal een halve dag getrokken in koud (mineraal)water. Oosterveen laat weten dat deze bereiding in het buitenland \u2018hot\u2019 is maar in Nederland echt vernieuwend.<\/p>\n

Bij de hartige lolly van varkensterrine met rode vruchten adviseerde hij een Dilmah zwarte thee uit de Watte serie. Deze Meda Watte is op 900 meter hoogte verbouwd en wordt qua karakter vergeleken met een wijn op basis van Shiraz. De thee heeft een rijke smaak met een bijna cacaoachtig aroma, genoeg karakter om de smaken van de terrine op te vangen.<\/p>\n

Verder liet Oosterveen een visgerechtje proeven begeleid door een Springtime Fragrant Oolong, die Dilmah sinds kort op de Nederlandse markt voert. Deze thee is in de lente geoogst waardoor hij een fijn, floraal aroma heeft gekregen met de “kick” van een zwarte thee. Deze kick zorgt ervoor dat de thee goed overeind blijft bij volle intense smaken.<\/p>\n

Uiteraard werd alles op gepaste wijze in flutes wijnglazen geserveerd. Tijdens een reis op Sri Lanka (The Home of Dilmah Tea) wist Chris zelfs de kritische Franse (wijn)sommeliers te overtuigen van zijn thee-spijs combinaties. \u2018De mogelijkheden zijn onuitputtelijk en ik blijf steeds nieuwe toepassingen ontdekken\u2019, aldus Tea Tender Chris.<\/p>\n","protected":false},"excerpt":{"rendered":"
